Applesauce Bread

Comfort finds us in unexpected places. Like this simple, not-too-sweet, subtly flavored apple sauce bread with sugar and spice and all that’s nice. It’s perfectly warm out of the oven, natch, but also toasted and slathered with butter the next morning or afternoon or at 2 a.m. or, hey, anytime you want some warmth.

Instruction:

  1. Preheat oven to 350. Butter a 9-by-5-inch loaf pan.
  2. In a large bowl, mix together ½ cup soften butter, 2/3 cup sugar, ¼ cup light brown sugar, 2 large eggs, ¼ cup greek yogurt and 1 cup unsweetened applesauce.
  3. Add the 2 tsp vanilla, 1 cup flour and ¾ cup almond flour, 1 tsp baking soda, ½ tsp baking powder, 1 teaspoon nutmeg, 1 tbsp cinnamon and mix until just combined.
  4. Pour batter into prepared pan. Top with crumbs. Bake for 45-60 minutes or until tester comes out clean.

Crumbs:

Put ¼ cup, 2 tbsp flour, ¼ cup + 2 tbsp oats, ⅓ cup brown sugar, ½ tsp cinnamon and a pinch of salt in food processor. Turn on and add 4 tablespoons butter a bit at a time until it resembles crumbs.
