Christmas Tree Salad πŸŽ„

Eating healthy food and salads is synonymous with most people. With the outbreak of COVID-19, most of us have become chefs and try our favourite junk food at home instead of buying a bowl of salad.

Enjoying a healthy plant-based diet which contain nutrients like vitamin A, vitamin C, vitamin E, protein and zinc to help your immune system. This holiday salad looks like a sparkling Christmas tree! Citrus, kale and pomegranate. And look! There is a toast star on top!

INGREDIENTS

  • 1 bunch Swiss chard, chopped
  • 1/3 cup pomegranate seeds
  • 3/4 cup red grapes, sliced
  • 2 mandarin oranges, peeled and sliced in half, segments separated
  • 1 small onion, diced
  • 2 Tablespoon dried cranberries, optional
  • 1 small apple, chopped
  • 1/2 cup pecans, chopped

Dressing:

  • 1 Tablespoon maple syrup
  • 2 Tablespoon extra-virgin olive oil
  • 1 Tablespoon apple cider vinegar
  • 1/8 tsp coriander
  • a few pinches of orange zest
  • pinch of cayenne
  • salt and pepper, to taste

Star Topper:

  • 1 slice toast, sliced into a star

HOW TO MAKE

  1. Prepare all the ingredients and toss the dressing/spices into a large bowl. Mix and toss well, as this will help to distribute the flavours and infuse the chard with flavour.
  2. You can serve immediately or chill in the fridge for up to 12 hours in advance before serving. Any longer and your chard will start to get a bit soft. Serve raw and chilled. For the β€œstar” tree topper, simply toast any slice of bread and using either a knife (free-hand) or a star-shaped cookie cutter, cut out a toast star to top the tree salad.
